Soft-boiled eggs provide a creamy texture and an extra punch of protein making this soup a great way to stay full and energized throughout your morning—or evening! These eggs are easy to digest and rich in healthy fats that balance hormones and support brain function. Choline, found in soft-boiled eggs, is essential for brain health, supporting cognitive function, memory, and nerve signaling, while also playing a key role in liver function and fat metabolism.

Leeks and carrots add a natural sweetness, while delivering a healthy dose of vitamins and fiber. Ingredients

12oz chicken bone broth

1 heaping T yellow miso

1/3 cup carrots chopped

1/3 cup leeks chopped

1/3 cup edamame (shelled)

1/3 cup cilantro chopped

1 sheet nori cut or torn into bite sized pieces

1 clove diced garlic

1/4" sliced fresh ginger root

1/4" sliced fresh turmeric root

1 perfect soft boiled egg (see recipe)

Preparation

Boil water for Perfect Soft Boiled egg and follow recipe instructions. In a small saucepan add bone broth and miso paste. Bring to a boil and stir to dissolve miso. Once boiling add carrots, garlic, ginger, turmeric, edamame, and leeks and continue to boil for 1-2 minutes. Reduce to a simmer and cook for about 5 mins (or until your egg is done). In a bowl add cilantro and nori. Pour soup mixture over cilantro and nori. Add egg. Serve immediately. Feel free to eat the sliced ginger + turmeric (they're super nutrient dense and immune boosting) or remove if that's not your thing. Enjoy the taste and all the health benefits!
