Ingredients
·    1 tsp rice vinegar
·    ¼ cup coconut sugar
·    2 pitted dates
·    1 10oz package frozen raspberries
·    3 T beef gelatin
·    1 garlic clove (optional)
·    1 dried chipotle pepper
·    ½ cup water
Preparation
Place all ingredients except for beef gelatin and water in a small saucepan on medium heat. Cook until raspberries are melted and the mixture is saucy, about 3-5 mins. Reduce heat and simmer. In a small jelly jar (or bowl of choice) add beef gelatin and water until gelatin is dissolved. Add 3 T of gelatin mixture (you can add more later to increase thickness if desire). Simmer on low heat until all liquid is dissolved, stirring occasionally (anywhere from 20-45 mins). Mixture will thicken further when cooled. Once you achieved your desired consistency, remove chipotle + place in mason jar or other heat safe container (NOT plastic) and use immediately or allow to cool completely before storing in fridge. Will keep for up to 1 week.Â
